Joy's 'Nuff Said Gazpacho This delicious cold soup recipe should be prepared a day in advance for maximum taste. 1 Tablespoon Joy's 'Nuff Said Spice 2 medium Bell (or Poblano) peppers, de-seeded and diced 1 medium onion, diced 2 medium tomatoes, diced 2 cucumbers, diced 2 cloves garlic, diced 2 cups olive oil 4 cups tomato juice 1 -1/2 cups chicken broth 1 Tablespoon fresh basil or cilantro, chopped Juice of 1 lemon Sour cream Combine ingredients and chill overnight. Prior to serving, top with a dollop of sour cream and garnish with chopped cilantro. Yield: 2 servings. |
