Joy's Meat Soak Whiskey Marinade This marinade is perfect for summer grilling - use on any kind of meat. Our favorite is sirloin steak or salmon. 3 tablespoons of
Joy's Meat Soak 1/4 cup whiskey 2 tablespoons olive oil 2 tablespoons fresh sage, chopped (1 tbs dried) 2 tablespoons fresh thyme, chopped (1 tbs dried) 2 cloves garlic, minced 1/2 teaspoon chili powder Pepper, to taste Blend together all ingredients. For red meat: Marinate up to 24 hours before grilling. For poultry/pork: Marinate for 2-24 hours. For fish: Marinate for 1-24 hours. Yield: Will marinate 1-2 pounds of meat, depending on marinating time and porousness of meat. Preheat oven to 350°. 1/4 cup Joy's Meat Soak 6 medium bell peppers 1 lb. ground beef (or turkey) 1 large onion, chopped 1-16 oz. can diced tomatoes 1/2 Cup water 1/2 Cup uncooked white rice 1 teaspoon Worcestershire sauce 1 cup grated Monterey Jack cheese Salt and pepper to taste Remove tops and seeds from bell peppers. Precook peppers in boiling water for five minutes; drain and set aside. (For crisp peppers, omit precooking.) Lightly brown meat and onion. Add Joy's Meat Soak, tomatoes, water, rice, and worcestershire sauce. Cover and simmer till rice is tender, about 15 minutes. Stir in cheese, add salt and pepper to taste. Stuff bell peppers with meat mixture; stand upright in baking dish and bake uncovered at 350° for 30 minutes. Stuffed peppers will be hot; if necessary, let sit for a few moments before eating. Garnish with more shredded cheese. Yield: 6 servings. A matchless treat for
everything from watching 4 tablespoons Joy's Gringo Chile 4 - 8 oz. packages cream cheese 1/4 pound blue cheese 1 pound margarine (do not use soft margarine) 1 small jar pimentos, chopped 1 small can black olives, chopped 5 green onions, chopped 6 ounces pecans, chopped 2 tablespoons parsley, dried or fresh Mix well with hands until thoroughly blended shape into ball. Roll the cheese ball in chopped pecans and parsley. Refrigerate before serving, if possible several days in advance to enhance the flavors. Serve with crackers or corn chips. Perfect appetizers for any occasion. 1/2 jar - 15 oz. Joy's Gringo Chile 12 flour tortillas 1 - 8 oz. package soft cream cheese Layer cream cheese and Gringo Chile on tortilla. Roll tortilla, cover with plastic wrap, refrigerate until serving. Before serving, slice and place on tray. Variation: Instead of Gringo Chile, use any of Joy's Chile Jams.
